The interest of the project is to exploit the mass for a structural and technical purpose. The cooking school program is a fundamental source as to the technical direction that we want to give to the mass that structures our space: to be a source of heat. The energy dissipated from the kitchens located on the first floor will heat a closed water circuit located on the ceiling which will then penetrate into the mass and rise to heat all the floors. This dissipated heat will contribute to the hygrothermal comfort of the project. Our relationship with the space, which morphology results of the shape of the bunker, influences the choice of the unit for the masonry composition: the unit is the compressed earth brick. It allows the structure of the space as well as a very good regulation of humidity, humidity which we do not lack with our program. Working with the mass inspired us from medieval architecture, in particular for the external appearance as well as for the layout of the interior space. The equipment of this unit for the central core will allow a dwelling of the mass: moucharabiehs are created with seating around the entire perimeter of the mass, on the restaurant floor and on the mezzanine.

We wanted to bring this structural mass to life by amplifying the relationship between the living and the inert. The central core is captivating both for the dissipated energy of the kitchens and for its mystical and intriguing aspect.
